Our Story

Couple Brook Noel and Andy Stowers spent most of their lives in Wisconsin, before deciding to move to Connecticut in 2013 after their only daughter left for college. 

 

Andy had worked many years in corporate America, and Brook as an author, with over 30 books to her credit. With crazy travel schedules, they were like two ships passing in the night. After the2008 recession, they were reevaluating what to do next. Almost jokingly, Brook suggested they move across the country to where they knew absolutely no one and buy a restaurant. Six weeks later they were driving the coast from Boston to Guilford, and 12 weeks later they moved to Litchfield.

 

Originally the couple purchased Saltwater Grille, an existing restaurant, and enjoyed operating that for 11 years. After COVID they began to reassess the changes in the restaurant industry and decided they were ready for a change too. In January of 2025 they closed Saltwater Grille and rebranded to Sage & Salt, featuring modern comfort cuisine. In a market where everything is getting more expensive, the change allowed them to lower prices, broaden the menu, making the restaurant more assessable for regular dining instead of special occasions.

 

In addition to Sage & Salt they opened Salt 2.0 in 2020 during the pandemic. That concept provides quick service meals in Torrington and Brookfield.
